Recipe: Chop Suey with Chorizo Macao

When was the last time you had a proper home-cooked meal? There’s nothing wrong with dining out. It’s just that home-cooked meals are way better and heartwarming especially when you share it with your family.

Last weekend, my family and I had a simple Sunday lunch at home. Since it wasn’t busy, I decided to cook lunch with the help of my abuelita (lola/ grandmother). Take note, my abuelita relies on her senses when cooking. She doesn’t like measuring or reading recipes. In short, she makes her own.

So together we checked what we have in stock. Purple onions and garlic are not a problem as my other abuelita sent some from the province as well as other veggies. So in all, we have Broccoli, Cabbage, Carrots, Cauliflower, Chayote and Red Bell Pepper. The best recipe my abuelita can think of is Chop Suey.

Chop Suey is a stir-fried assorted fresh vegetable with some pork, chicken or shrimp. Vegetables commonly used include carrots, cabbage, celery, Baguio beans and cauliflower. But you can change the vegetables with what you currently have or want and then just choose if you want pork, chicken or shrimp.

We actually have chicken but opted for Chorizo Macao instead. We haven’t tried any type of sausage so when abuelita saw this, she was decided. This Chorizo Macao is by JILL Homemade Products. They have a kiosk at Ayala Malls Feliz where they sell cooked and uncooked frozen homemade products.

Recipe: Chop Suey with Chorizo Macao

Ingredients:
  • Garlic
  • Purple onion
  • Broccoli
  • Cabbage
  • Carrots
  • Cauliflower
  • Chayote
  • Red Bell Pepper
  • Chorizo Macao
  • Patis (fish sauce)
  • Soy sauce

Prep Time:

You can start by crushing garlic and slicing the purple onions.

Blanching:

This is a process where you boil vegetables briefly until partially cooked and then plunging into iced water to halt the cooking process.

In this recipe, you will need to blanch all vegetables except the cabbage and red bell pepper. To blanch, boil water in a deep pan. While waiting, wash, peel and slice the rest of the vegetables. When the water starts to boil add in some patis or fish sauce for flavour. Then start blanching one vegetable after another. Once done, it’s time to cook.

Cooking instructions:

First, you need to fry the Chorizo Macao. Since chorizo is a very oily sausage, you don’t need oil to fry it. Just make sure the pan is hot. But if you really want to put oil, you can put a small amount.

Once done, remove the Chorizo Macao and fry the onion, garlic and Chorizo Macao. Then water, soy sauce and the red bell pepper. Once it starts to boil, add in the rest of the blanched veggies and the cabbage last.

This recipe is perfect for a family of six! I’m so glad we tried incorporating Chorizo Macao. It’s really and flavourful on its own. But if you want to level it up, cook Chop Suey with Chorizo Macao by JILL Homemade Products.
