Filipinos love pancit or pansit, a generic term for a noodle dish. Since it was introduced by the Chinese, pansit has been adapted into local cuisine. In fact, there are different types of pansit which can also be dry (sautéed) or wet (with broth).
There’s Pansit Bihon, a not-to-be-missed during birthdays because its lengthy strands represents long life. If you want a classic noodle dish, the Pansit Canton is a great choice. The yellowish Canton noodled can be boiled or deep-fried. The noodle dish from Lukban, Quezon called Pansit Lukban or Pansit Habhab is also good. Its brown miki noodles are sautéed with sayote and pork.
But if you ask me, the most delicious one of all is Pansit Malabon. You guessed it! This noddle dish is from Malabon. 🙂 Their pansit is made of thick noodles topped with a delicious bright orange sauce and hard-boiled eggs garnished with pechay, shrimp, ground pork and pork rinds.

My favorite meals are Pansit Malabon with Boneless Bangus, Beef Tapa with Egg and Pansit Malabon with Lumpiang Shanghai. But I highly recommend the Special Cabanatuan Longanisa with Egg.

Trust me. It’s really flavorful. My grandmother loves it, too. She even bought a pack of Special Cabanatuan Longanisa at the restaurant.
